9 grilling tips for your Memorial Day weekend backyard dinners

As we all bounce back from the pandemic, a holiday weekend is a good time to slow down and reflect—and, of course, celebrate Memorial Day with loved ones.

Last summer, 225 recipe writer Tracey Koch revisited some of her family’s favorite grilling recipes from the 225 archives. She also added some grilling tips to help make your outdoor cooking experience that much better. We’re sharing them again here, and be sure to take notes—this insight will be useful all summer long!

Stay safe, keep smiling and enjoy the weekend.

1. Preheating the grill properly is key for cleaning: This will help ensure your meat doesn’t stick to the grates, and it will also give you a nice sear, locking in the meat’s natural juices. Preheat the grill with the lid closed for about 10 minutes to around 500 degrees, a temperature that will make it easier to clean off any stuck pieces of food that may have been left on your grates. If using a charcoal grill, the coals should glow red while heating. If you are using a gas grill, keep the burners on high to allow the grill to reach the desired temperature. Use a stainless-steel brush to scrape the grates clean before grilling. Then, lower the heat to the desired cooking temperature.

2. Try the direct heat method: Placing the meat directly over the flame helps sear the meat quickly, locking in juices and creating a crispy layer on the outside. Use direct heat when grilling smaller cuts of tender meat, chicken, fish and shrimp that require 20 minutes or less of cooking time.

3. Indirect heat is best for low and slow cooking: This is when the fire is on either side of the meat during the grilling process. Use this method for whole chickens or bone-in skin-on pieces of chicken, as well as thicker chops, steaks and larger, tougher cuts of meat.

4. Gas grill 101: For direct heat, preheat the grill to 400 degrees and place meat directly over the flame. For indirect heat, preheat the grill to 400 degrees and turn off the flame on one side of the grill. Place the protein over the unlit side of the grill to ensure a lower, slower cooking time.

5. Charcoal grill 101: Place an even, single layer of coals to sear meat quickly. In order to create indirect heat, place the coals double banked on either side of the inside of the grill, and place your meat in the middle of the grate with the flames or hot coals on either side.

6. Keep a lid on it: For a consistent temperature in both the grill and internal temperature of the meat, keep the lid closed as much as possible. This will keep the temperature high enough to allow the meat to sear without charring. It will also decrease the cooking time and will help the meat stay juicier and more tender while grilling.

7. Use a timer and thermometer: Don’t overlook the use of gadgets to help prevent overcooking. When using a meat thermometer, keep in mind that the internal temperature of the meat will rise an additional 3-5 degrees after you remove it from the grill.

8. Let it rest: To make sure grilled meats turn out juicy and tender, always let them rest for 5-10 minutes before cutting and serving. This will allow the juices to redistribute through the meat, making it more tender upon serving.

9. Don’t forget grilled vegetables: Take advantage of summer’s yellow squash, zucchini, red and yellow bell peppers, eggplant and mushrooms. Cut the vegetables as uniformly as possible to ensure they cook evenly. To prevent them from sticking to the grill, pat them dry with a paper towel once cut. Also, do not salt the vegetables until after they have been grilled because it will draw out natural liquids and cause them to steam as they are grilling, making them wet and soggy once cooked.

Book private, one-on-one lessons by first selecting the class you’re interested in (classes last about 2.5 hours and cost $299 for two people). Then, you’ll have a kitchen prep session with a kitchen assistant, who helps you organize your tools and ingredients before you’re paired with a chef to whip up a meal together. Beyond what’s happening on your stove, you’ll also make a new friend: For example, you might bake baklava with a Turkish chef who’ll then show you her pomegranate trees growing outside, or paella with a Spanish chef who can also tell you about what’s happening with the quarantine in his country. In light of the current situation, Chef & The Dish just launched a new limited-time series called “What’s In Your Fridge?”, a one-hour class ($99 for two people) where you’re paired with a surprise chef from anywhere in the world who will ask you to open your fridge and pantry and teach you how to make a main dish with whatever ingredients you have on hand.

We offer themed classes on anything from Italian Boot Camps, Knife Skills, Holiday Baking and Couples Classes to making Dim Sum and Seasonal Grilling. Classes are available to all ages through our Children's and Young Adult programs.

Our goal at Classic Thyme is to be a destination "Where cooking is always serious fun." Our instructors are culinary professionals with varied backgrounds and specialties. In addition to our regularly scheduled classes we also provide a unique venue for Birthday Parties, Private Parties and Corporate Cooking Team Building Events. We've hosted wedding showers, bachelor dinners, retirement parties and anniversary parties. We will work with you to develop a customized menu suited to your needs.

Our new building, 'Toscana,' has expanded our cooking school to include two classrooms which allow more flexibility and availability to accommodate more of your needs.

Judging classes

Kansas City Barbeque Society (KCBS) teaches Certified Barbeque Judge classes and cooking classes at many locations around the country. These are not cooking classes. They teach you how to judge barbecue so you can join a panel at one of the many KCBS competitions across the nation.

Memphis Barbecue Network (MBN) is another major competition circuit and they teach the MBN method of judging in a handful of locations throughout the summer.

PLEASE NOTE: If you are local to Roswell, Georgia, you can pick up the mini bottle set up until the day of! Should you be from out of town, please take into account it can take anywhere between 1 - 4 business days to ship.


  • A grocery list for items needed will be provided on the Sunday prior to the class date.
  • The full recipe and any prep notes will be provided 48 hours before the class begins.

21 Grilling Hacks for Your Memorial Day Cookout (No. 6 Is My Favorite!) by Donna John

One of the best ways to kick off summer is to host a Memorial Day barbecue with your family and friends. Looking for where to start to make it perfect? The Soul Publishing’s popular 5 Minute Crafts YouTube channel shared a video of 21 creative ways to master the grill for the long weekend. Here are a few of their genius grilling tips:

1. Rosemary Kebabs: Rosemary kebabs can simply be made by using a rosemary branch and sliding your choice of veggies and protein. Not only are you reducing waste, but the rosemary aroma will definitely uplift the flavor of anything your put on your kebab.

2. Serving Condiments: Grab your muffin tins from the pantry and bring it outside to create a condiments bar. Add a variety of condiments in each section to keep things less messy and in one place for your guests.

3. Cooking Fish: Planning on adding to fish to the grill? Adding lemon slices will not only infuse the flavor, but it’ll also save your fish from sticking to the grill and ending up in shreds.

4. Onion Burgers: If you enjoy onions on your burger, try adding the protein in the center of an onion ring. This will keep your burgers nice and juicy.

5. Kebab Sticks: If your guests request a variety of proteins grilled, adding two kebab sticks on the ends of the protein and stacking them will get more grilled efficiently.

6. Personalize It: This one is my favorite! Write the person's name and how their burger or steak is prepared (well done, rare, etc.) in the condiment of their choice (ketchup, mustard, barbecue sauce, steak sauce, etc.) on the bun or plate. This hack is dedicated to my mother-in-law who won't eat venison burgers.
