And this morning baked pea meatballs, a delicious and spring second dish even if today here in Naples, everything seems to me except a spring day. This week has been really terrible, the crazy weather, the upcoming deadlines, the talks, the new projects and the unpleasant little unexpected events, have sent me into the ball, tomorrow I'm leaving for a trip and although I'm anxious because with everything I have to I could not afford to be absent for 4 days, I am very happy because I need to switch off and distance myself from work and obligations. How to make pea meatballs


Pea falafel | Fabulous with the thin and crunchy crust

Today we present you some delicious and irresistible meatballs that everyone can eat: even vegans and celic people, as this vovamda is free of ingredients of animal origin and their derivatives but it is also gluten-free. We are talking about the Pea falafel. Very easy to prepare, these little balls of goodness are made with a mixture of quinoa flour, chopped peas, onions, oil and flavored with spices.

These are finger foods that children like very much: you can have fun making them for them or with them. In fact, the dough is prepared in a few simple steps and does not need rest times.

With very few ingredients and a minimal economic expense, you will then create nutritious and healthy meatballs to be served for a family lunch or a dinner with relatives and friends. If you bring these falafels as a secodno, accompany them with a light side dish such as a fresh salad dressed with oil, salt and vinegar or a potato pyrex or other light vegetables.

These meatballs are also perfect to be served as an appetizer for aperitifs together with a good alcoholic and non-alcoholic cocktail. Also excellent served as an aperitif or in a buffet or bruch.

Meatballs with tomato and peas

Meatballs with tomato and peas are a second course always very appreciated by everyone, because they are simple, tasty, they can be accompanied by simple bread but also by polenta, mashed potatoes or yellow risotto, in short, these meatballs are like the black color: they are fine with all.

To make them, start by taking care of the mixture for the meatballs: in a bowl put 250 g of minced meat together with 150 g of sausage, add a tablespoon of chopped fresh parsley, a tablespoon of mustard, a pinch of garlic powder, 30 g of parmesan grated Padano, 30 g of crumbled bread crumbs, 1 egg, 2 tablespoons of milk, a pinch of salt and a pinch of pepper, then knead everything, obtaining a firm and homogeneous mixture.

Cover the bowl with cling film and let the mixture rest in the refrigerator for about 20 minutes. After the necessary time, resume the mixture, place it on a cutting board and divide it into 12 equal parts.

At this point, form the meatballs: grease your hands with a little oil (it will facilitate the whole operation, in this way it will not stick to your hands) take a small piece of mixture and shape it into a ball, then press it lightly.

Once ready, brown the meatballs in a saucepan with a drizzle of oil and the chopped onion, stirring them often to cook evenly.

Cut the rabbit meat into cubes, mix it in a bowl with the egg, the stale bread soaked in milk and squeezed, salt and pepper, chopped parsley and half a grated lemon peel.

Blend the mixture with a hand blender or mixer and, if necessary, add some breadcrumbs.
Shape into little balls and roll them in flour.
Cook the meatballs in a pan with a drizzle of oil, add the boiled peas and cook, covered, for about ten minutes. Boil the noodles in plenty of salted water, drain them, pour them into a bowl, add a drizzle of oil and saffron. Serve the noodles with the meatballs and peas.
