Remember the recipe Hedgehog cookies which I gave you some time ago? If you don't know what I'm talking about, you can find it here, in detail. Well, discussing on Facebook, in the community formed around the blog, about this old recipe and so loved by us, one of the members of the group gave me an idea to reinterpret it.

So today we will have the recipe for Hedgehog cookies reinterpreted, I mean I will tell you the recipe for Hedgehog cookies with chocolate. And not only that! Today's recipe is not just a reinterpretation of the one published some time ago on the blog.

I found another variant in the old cookbook of my aunt, with other ingredients. My aunt had several notebooks. He started to write down the recipes, more schematically, in a small notebook, with a few pages, such as today's ones, type "dictating".

Then, when it became too small, he rewrote them and grouped them in a diary-type notebook. I have these two in the original. My aunt gave them to me during my life and I kept them with pleasure because I consider them of inestimable value. For me, at least.

There is also a third variant, the last one, much more complex, with many more recipes written in a little more detail. I just posed for this. The original is, as is normal, I say, to her daughter.

Well, the other day, looking for the old recipe for cake with ness and flipping through all 3 variants of the recipe book I noticed that there are 2 recipes for Hedgehog cookies. So now, for the reinterpreted version, I used the second one, the one in which the dough also has an egg in the composition.

The recipe for Hedgehog cookies with chocolate it is, like the first one, very simple and easy to do. It is perfect now, for festive holiday celebrations but also in general, at any festive meal over the year.

They are very easy to make, do not last long and, if you have children, you can take them with you to the kitchen to help you. They will be super excited to shape the balls for Hedgehog cookies or put the chocolate in the middle of them before putting them in the oven.


  • It took
  • 300 g flour
  • 225 g sugar
  • 4 eggs
  • 200 g butter
  • 150 g dark chocolate
  • 2 tablespoons cocoa
  • 1 teaspoon instant coffee (ness)
  • 150 ml of milk
  • 1 teaspoon baking powder
  • a pinch of salt
  • decoration
  • 50 g dark chocolate + 2 tablespoons milk + 1 tablespoon oil
  • 50 g white chocolate + 2 tablespoons milk + 1 tablespoon oil
  • colored candies

Bake for 30-35 minutes at 180 ° C, if we use two small shapes and 40-45 minutes for a larger shape. When they are ready, carefully take them out on a grill and leave them to cool.
For decoration, melt the two types of chocolate in two separate bowls, together with the milk and oil, then decorate the cakes according to your imagination and sprinkle the colored candies on top.

We can serve when the chocolate has set. Delicious, good appetite!

  • 4 tablespoons oil
  • 60 g chocolate chips (chips or even chopped chocolate)
  • a pinch of salt
  • Glaze
  • 50 g sugar
  • 50 ml water
  • 50 g chocolate
  • 25 g butter
  • 1/2 esenta rom
  • pistachio / ground walnut / almonds for garnish

Separate the eggs and mix the egg whites well until they start to take on consistency, then gradually add the sugar and continue mixing until you get a strong meringue.

Mix the yolks with a pinch of salt and oil until smooth and then lightly incorporate them into the egg whites. Use a spatula or wooden spoon and mix gently from top to bottom. Then we can incorporate the sifted flour together with the baking powder (if you have chosen to put it).

At the end we incorporate the chocolate tails.

Cover a cake tin (7 x 11 x 30 cm) with baking paper, place the dough and level it well.

Bake the cake for 35-40 minutes at 180 ° C. Test with the toothpick for safety.

Meanwhile, prepare the icing. In a saucepan, boil the water with the sugar for 4-5 minutes on low heat or until a thick syrup is formed. Turn off the heat, add the chocolate and butter and stir until they melt. Don't worry if the icing looks cut. , it will be homogenized very well after cooling. When it has cooled, add the rum essence.

Glaze the cake after it has cooled, possibly heat the icing a little more if it has hardened. Weigh the chopped pistachios, walnuts, almonds or even coconut flakes on top.

Keep the cake cold, until the last bit. Enjoy!
